Quick and Easy Paleo Shrimp Scampi

This is a great recipe to use for a quick lunch or dinner. It’s also easy to prepare at night or in the morning, put in a covered dish, and take to work.  It will leave you satisfied!


Spaghetti Squash (Fast Way to cook:  Cut in half, place cut side down in a glass baking dish filled with 1/2 in. of water.  Microwave for 7-20 minutes depending on size of squash.  You want to make sure it’s cooked softer, unless you like al dente squash)

Frozen cooked shrimp (thaw in hot water)

1/2 tblsp. Butter or ghee

2 Tblsp. Olive oil

1 tsp dried basil

1/2 tsp Garlic powder


shredded parmesan cheese (optional)

Melt butter and 1 Tbsp of olive oil over medium high heat.  Sautee shrimp until heated through and golden.  Scrap 1/2 spaghetti squash into the pan with the shrimp.  Add the rest of the olive oil, basil, garlic powder, and salt and pepper to taste.  Sautee squash and shrimp for a few minutes, then remove to plate.  Sprinkle with shredded parmesan cheese if desired.
