This is a great recipe for college students, anyone on a budget, or anyone who just needs a quick, inexpensive and healthy meal. You can transform the recipe easily by adding your favorite ingredients. What a treat this was on a yucky cold day, but I was still able to get in a serving of veggies into this comfort food. Enjoy!
Zoodle Noodle Soup
*You will need a zoodle maker. I got mine for about $12.00 on Amazon; I love it.
Ramen Noodle Soup (any flavor)
Fresh ginger (optional)*
Wash Zucchini and trim off stem. Turn it into zoodles using a zoodle maker. Follow the directions on your ramen package, and toss in the zoodles with the seasoning at the end of cooking. Eat!
*I buy fresh ginger root, then peel a large section of it. I wrap it carefully and put it in a good quality freezer bag. Whenever I need some ginger, I just pull it out and grate it, no thawing!
Modifying the recipe:
This is a great recipe to have fun with. You can add chicken, other veggies and spices. Use leftovers! Get creative!
